i cooked 2 cups jasmine rice...warmed in rice cooker till dry...refrigerated for several hours...made dish...flavor excellent but rice mushy....how to make crisp rice like restaurant? i want answer!!!

I am in Australia... I was listening to the radio .... there was a talk-back discussion of different fried rice recipes, and someone mentioned they went to a Thai restaurant and the fried rice had tomatoes cooked with it. I thought that was interesting, but I like this YouTube recipe better. The basil inclusion looks very interesting, I will try it for sure!Should a particular oil be used or can I use olive oil? I think someone said peanut oil is better??
